1. Beat butter and sugar in the small bowl of an electric mixer until pale and creamy. Add golden syrup and egg yolk and beat until combined. Add flour, ginger, nutmeg and bicarb soda and mix with a wooden spoon to combine.
2. Knead dough gently on a lightly floured surface until smooth. Wrap in baking paper and refrigerate for 30 minutes. Preheat oven to 180°C. Line 2 oven trays with baking paper.
3. Roll out dough on a lightly floured surface until 5mm thick and cut out letters using cutters or patterns. Arrange letters on prepared trays and bake for 8-10 minutes or until golden. Stand trays on wire racks until letters are cool.
4. Remove letters from trays and leave on wire rack until cold. When cold, spread the letters with a little royal icing and dust with icing sugar.
