Ingredients

  • 3 cups self-raising flour
  • 2 Tbsp caster sugar
  • 125g butter, chopped
  • 200g frozen mixed berries
  • 2 cups buttermilk
  • Extra plain flour, for kneading
  • 1 cup muesli

Berry Butter

  • 100g frozen mixed berries,
  • defrosted at room temperature
  • 125g butter, softened
  • 1 tsp rosewater

Method

1. Preheat oven to 200°C. Line a large ovenproof tray with baking paper. Sift flour into a large mixing bowl, add sugar and stir to combine. Add butter to the dry ingredients and rub in with your fingertips until mixture resembles fine breadcrumbs. Add frozen berries. Make a well in the centre, add buttermilk and stir with a table knife until mixture forms a stiff dough.

2. Dust a flat surface with a little flour, turn out dough, knead gently to form a round and divide into 3 even pieces. Sprinkle surface with a little more flour and the muesli. Knead dough for 1 minute until smooth and coated with muesli. Shape into rounds and put on prepared tray. Bake for 35-40 minutes until golden.

3. To make Berry butter: Push defrosted berries through a sieve. Beat butter with electric beaters until pale and creamy. Add berry puree, a tablespoon of berry pulp from sieve and rosewater. Stir until well combined. Serve damper with Berry butter.
