Parsnip and Potato Cheese Gratin

Ingredients

  • 3 parsnips
  • 3 desiree potatoes
  • Packet of Coon Cheese
  • 300ml cooking cream
  • sea salt
  • freshly ground black pepper

Method

Preheat oven to 180ºC. Brush a 6-8-cup-capacity ovenproof dish with melted butter. Peel 3 parsnips and very thinly slice. Thinly slice 3 desiree potatoes. Put half the parsnip and potato slices in prepared dish.

Grate a packet of Coon Cheese. Put half the cheese on top of the sliced parsnip and potato. Pour over 300ml cooking cream, top with remaining parsnip and potato slices, top with remaining cheese, and season with sea salt and freshly ground black pepper. Bake for 35-40 minutes or until top is golden and vegies are tender.
