1. Stir-fry the chicken, garlic, ginger, broccolini and cashews in olive oil in a hot non-stick frypan or wok until the chicken is cooked right through and the broccolini is tender. Add a splash of water every now and then to the pan, to help with the cooking and to steam the broccolini.
2. Combine the hoisin sauce and peanut butter with a little water to form a smooth, runny paste, then add cashews and toss through the chicken mixture. Spoon into serving bowls.
Variation: add soba noodles to make chicken noodle stir-fry. Throw in 100g freshly cooked al dente soba noodles at the same time you add the sauce ingredients.
