Ingredients

  • 8 frenched lamb cutlets (560g)
  • 2 tbs Greek seasoning
  • Salt and pepper, to taste
  • 600g kumara, peeled and chopped
  • 12 black olives in brine, drained, finely chopped
  • 1/4 cup chopped fresh basil
  • Cooking oil spray
  • 100g snow peas, trimmed
  • 80g watercress

Method

1. Place lamb cutlets and Greek seasoning in a large bowl. Toss to combine. Season with salt and pepper to taste.

2. Boil, steam or microwave kumara until tender. Drain. Place in a large bowl. Mash. Add olives and basil. Stir to combine. Season with salt and pepper. Cover to keep warm.

3. Heat a large grill pan over medium heat. Spray with cooking oil. Add cutlets. Cook for about 3 minutes each side, or until cooked to your liking. Remove and stand for around 2 minutes.

4. Meanwhile, add snow peas to a pan of boiling water. Boil for 30 seconds. Drain.

5. Serve lamb and mash with snow peas and watercress.

Notes

Make sure lamb cutlets are trimmed of excess fat before cooking. Chicken or pork fillets can be substituted for the lamb. Allow 125g meat per serving.
