1. Remove any fat and sinew from the chicken thigh fillets. Finely chop the chicken. Peel the pumpkin and cut it into small pieces.
2. Add pasta to a medium saucepan of boiling water. Boil, uncovered, for 5 minutes. Drain well and set aside.
3. Meanwhile, boil, steam or microwave pumpkin and broccoli pieces until tender. Drain vegetables well.
4. Heat oil in same medium saucepan. Add chicken pieces. Cook, stirring occasionally, until cooked through.
5. Add pumpkin, broccoli, cream cheese and pasta to chicken in pan. Stir over a low heat until cheese is melted and mixture is warmed through. Serve.
For a change, substitute broccolini for the broccoli in this recipe. It has a slightly sweeter taste. Cook whole broccolini before cutting stems into pieces.
